Common Sunchoke aka Jerusalem Artichoke Tubers x5
Jerusalem Artichokes (Helianthus tuberosus) produce edible tubers that taste like a cross between a potato and apple. Tubers can be dug as needed during fall/winter months for optimum sweetness. We like them in a creamy soup for cold days, or as a savory roasted vegetable.5 tubers will come in a mildly damp soil mix with at least 3 “eyes” per tuber and may have started to sprout. Plant soon after receipt for ultimate results. They can go directly in the ground, or in a pot if the ground is too frozen and perform best at a planting depth of 2-4”. They are really quite solid, and tolerate the harshest conditions Missouri will throw at them without complaint.Sunchokes can be persistent, so only plant where you aren’t worried about them staying.
